This book is fantastic. Inspiring. Exciting. Metric measurements are professional and simple. Period.
If you want to try something different, if you want to push the edge and stun everybody - get this book. If you're a foodie and adore Ferran Adria, if you're fascinated by haute cuisine, if you're curious as to how chefs do some crazy and simple things with food - get this book. If you just want to make whipped cream: do not get this book. Really.
The trick? There is no trick. It's all straight-forward. What they mean is that using the tool to create cold and hot whipped creations is seen as very difficult. It's not: this book is very clear about that. It's not rocket science or magic. Anyone can do this. not just Michelin starred chefs.
This book is meant to inspire creativity and fun! Learn something new, expand your mind, and play with your food: get this book.
Notes on the physical book itself - The layout is directly from the German version, so it's very European. The seventeen recipes (12 pages) are a foreword of recent creations in the culinary world using the iSi. Then there is a smallish introduction (including metric to American measurement conversion charts). Followed by recipes organized by tabs: "espuma" cocktails, finger foods, soups, sauces, desserts, cream variations, and soda drinks (for the iSi siphon). There are 91 recipes (108 including foreword), all with pictures, detailed recipes, and procedures. It is a three-ring binder-type book with a funky, floppy piece of metal in front; turns out if you slide that metal up or down it will hold your page securely. The contents of the book seems thin, but it really does have over a hundred recipes - they are just that simple.

The one I got from Amazon (not the fulfilled by Amazon) has a different cover, maybe even an older cover. All the liquid measures are in metric while the dry measures are in standard American. That should not be a big problem for most kitchens (definitely not mine). Most liquid measuring cups have both metric and standard graduations on the side. And since I have a 0.5 liter ISI Thermo Whipped Cream Dispenser (1 pint) (I'm guessing that most people will buy 0.5 liter size whippers), that means I only need to use one NO2 charger. If you happen to have a 1 liter whipper, the book says to use two chargers (more likely for restaurateurs). The introduction has two pages of conversions that's helpful.
So, while I've been making lots of fresh whipped cream (organic whole whipping cream granulated sugar, vanilla extract) I'm definitely going to try some of the recipes for some variety and especially vegetables in a different way.
PROS:
May motivate you to try and create espumas and other whipped foods and sauces.
CONS:
Overpriced. I see the price has come down since I purchased it.

Some of the recipes in this book sound interesting. But the first thing I noticed is that the recipes are metric. If you're in the US, and you really want to try these recipes, be prepared to buy metric measuring cups. In addition, there are unfamiliar terms used in the preparation instructions, so be prepared to use the internet to search for definitions. Overall, I wouldn't bother buying this book. I haven't decided whether to return it to Amazon or not.

I opened this book and wondered whether I had all of the pages. There was no title page or table of contents. None of the pages are numbered so I have no idea if the pages are supposed to be this way of if maybe they'd fallen out and been reinserted. About ten pages in is a section with an introduction. I agree with the previous writer about the metric measures and the ingredients. There are some interesting recipes but if you don't have the 1 litre bottle (I don't), it will make it even more difficult to make use of this book. This one goes back.

THIS WAS A WASTE OF MONEY FOR ME. THESE RECIPES AREN'T FOR THE AVERAGE EVERY DAY HOMEMAKER. THEY SEEM MORE FOR HIGH CLASS EXPENSIVE DINING .
